What are heritage pigs, anyways?
Since the rise of industrial hog farming, many of the old pig breeds have become very rare. Some farmers (like us) are trying to bring back these old (or "heritage") breeds and give consumers access to better quality meat. Factory-farmed pigs have been bred to produce very lean meat, at a very fast rate - so lean that it can be dry and bland when cooked. Heritage breeds may take longer to finish, but often have more fat, which makes the meat nutrient-dense, flavourful and moist. Plus, many heritage pigs aren't raised in confinement, which means happier, healthier animals and less environmental contamination. They also often have friendlier dispositions, and since they aren't as prone to illness and disease, they are much better animals to have on small farms and homesteads. |
